Easy Fish Corn Dogs (Recipe)

Calling all corn dog lovers. How does easy fish corn dogs sound? It's a simple meal to put together and your first question will be, "Why didn't I think of that?"
I do love a good corn dog, but it must be made with kosher hot dogs. I also love deep fried fish, so I thought why not combine the two?
These are made with white fish fillets dunked in batter and fried to a golden brown. I also give you my favorite tangy homemade tartar sauce for dipping.
Fish Corn Dogs Recipe
Corn Dog Batter:
- 3 cups homemade Bisquick mix
- 1-1/2 cups cornmeal
- 2 TBS sugar
- 1 TBS kosher salt
- 2-1/2 cups and 2 TBS water
- 16 white fish fillets, cut into 2 oz. portions, patted dry
- 4 tsp Old Bay seasoning
- 16 skewers, 6-inch ea.
- Oil, for frying, as needed
For the corn dog batter, combine all ingredients except the 2 tablespoons of water. Mix well and make sure there are no lumps in batter. Batter should be the consistency of a thick pancake batter. If it is too thick, use the extra 2 tablespoons of water.
Preheat deep fryer to 350 degrees and lay paper towels to drain the corn dogs on.
Season two of the 2 oz pieces with 1/4 tsp of the Old Bay seasoning. Skewer the fish and dip in prepared corn dog batter, being careful not to let the fish fall off the skewer.
Carefully place in heated oil and fry until golden brown and fish is cooked through, about 4-5 minutes. Drain on paper towels. Serve with homemade tartar sauce, recipe below.
Easy Homemade Tartar Sauce:
Mix ingredients together and chill for several hours before serving.
**You may also use fresh lemon juice instead.
Makes one cup.
Note: You may also serve these on toasted buns with lettuce and a slice of cheese.
