Kale Wrapped Pecorino Bundles

Makes: 12 bundles

Total prep and cook time: 1 hour

Ingredients:

  • 12 large kale leaves, de-stemmed
  • 12 ounces Pecorino cheese, cut into 1-ounce portions
  • 1 tablespoon salt
  • 1 stick of butter
  • Truffle oil for finishing

Blanched Kale Directions:

  • Bring a large pot of salted water to a boil
  • Drop the kale leaves in for 30 seconds
  • Remove kale from boiling water and quickly dunk in to an ice bath
  • Set aside

Browned Butter Directions:

  • On low heat, melt stick of butter slowly, stirring with a rubber spatula
  • Continue to heat on low, constantly stirring and swirling pan once the butter foams
  • The butter is browning when dark golden flecks appear
  • Pull the pan off the heat and pour butter in to a bowl to stop the browning

Bundle Directions:

  • Lay one piece of kale flat, pat dry if needed. Place a 1-ounce piece of cheese on one end of the kale, and roll and tuck in, like a tight little package
  • Repeat for the remaining 11 pieces of kale and cheese
  • Add 1 tablespoon browned butter to a sauté pan on medium heat
  • Sauté 4 bundles at a time in browned butter, turning and heating
  • Drizzle with truffle oil before serving
