Celeriac and Prawn Slaw

Total prep and cook time:  less than 30 minutes

Ingredients:

  • 6 raw, shelled prawns
  • 1/2 teaspoon salt
  • 1 celeriac, julienned
  • 5 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/4 cup chopped parsley
  • 1 tablespoon lemon juice
  • zest of 1/2 lemon

Directions:

  1. Heat 1/4 inch of water and 1/2 teaspoon salt in a small saucepan with lid until boiling
  2. Add shelled prawns and steam for 3 to 4 minutes, until done
  3. Remove prawns from saucepan and allow to cool on a plate
  4. Chop prawns when cooled
  5. Use a vegetable peeler to remove hard skin from celeriac, cut into thin slices,
  6. then into thin strips
  7. Mix together in a bowl the mayo, mustard, parsley and lemon juice
  8. Add celeriac to slaw dressing and incorporate thoroughly
  9. Stir in chopped prawns
  10. Zest lemon over mixture and stir again
