Venison Recipe: Baked Caribou Roll with Bacon

Looking for an easy venison recipe that tastes gourmet? This delicious baked caribou roll will have your guests surprised and satiated

Caribou Roll


  • 1 green pepper, chopped
  • 1 small onion, chopped
  • 1-pound ground caribou
  • 2 cups bread crumbs
  • 1 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 egg, beaten
  • 1 tablespoon homemade ketchup
  • 1/4 cup milk
  • 6 slices of bacon to cover roll when baking


Preheat oven to 350 degrees and spray a casserole dish with vegetable oil; set aside.

Mix ingredients together, form into a roll and place in the prepared baking dish. Lay slices of bacon over the top and bake for 45 minutes.

Remove roll from pan.



  • 1/2 cup water
  • 1 can tomato soup
  • 1 tablespoon white sugar
  • 2 tablespoon flour
  • 1/4 teaspoon salt


Add ingredients to left over drippings in dish. Cook until thick. Pour around the roll and serve.
