Venison Recipe: Baked Caribou Roll with Bacon

- 1 green pepper, chopped
- 1 small onion, chopped
- 1-pound ground caribou
- 2 cups bread crumbs
- 1 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 egg, beaten
- 1 tablespoon homemade ketchup
- 1/4 cup milk
- 6 slices of bacon to cover roll when baking
Preheat oven to 350 degrees and spray a casserole dish with vegetable oil; set aside.
Mix ingredients together, form into a roll and place in the prepared baking dish. Lay slices of bacon over the top and bake for 45 minutes.
Remove roll from pan.
- 1/2 cup water
- 1 can tomato soup
- 1 tablespoon white sugar
- 2 tablespoon flour
- 1/4 teaspoon salt
Add ingredients to left over drippings in dish. Cook until thick. Pour around the roll and serve.
