Slow Cooker Venison Bolognese with Garlic Chive Pappardelle Pasta Recipe

Slow cook this venison Bolognese sauce for 8 hours and pour over Garlic Chive Pappardelle noodles for a wild game twist on an Italian classic

Serves: 4-6

Cook time: 8 hours

Ingredients:

  • 2 pounds ground venison
  • ¼ cup olive oil
  • 1 yellow onion, finely chopped
  • 2 celery sticks, finely chopped
  • 2 medium carrots, grated
  • 2 garlic cloves, minced
  • ½ cup chopped parsley
  • 1 tablespoon sugar
  • 1 cup white wine (red wine works too)
  • 2 (28-ounce) cans crushed tomatoes
  • 1 cup whole milk
  • 1 bay leaf
  • 2 teaspoons salt
  • 2 teaspoons freshly ground pepper
  • 1 pound Garlic Chive Pappardelle (wide, flat pasta noodles)
  • Fresh Parmesan cheese, grated

Directions:

1. In a large frying pan, heat olive oil. Add onion, celery and carrots and sauté until softened, about 10 minutes. Add garlic and parsley, saving a little parsley for garnish. Stir for about one minute. Transfer to slow cooker.

2. In the same pan, without washing it, add ground venison. Season with salt and pepper and sauté until meat is browned, about 8 minutes. Add wine and sauté on medium-high heat until wine has completely evaporated, about 15 minutes. Transfer meat and pan drippings to slow cooker.

3. Add milk, bay leaf, sugar and crushed tomatoes.

4. Cover and cook on low for 8 hours. You can also cook on high for 3-4 hours, but the longer the sauce simmers, the more flavorful it will be. To thicken your sauce, either cook with the lid off for the last 30 minutes or add one tablespoon of flour, stirring until sauce thickens.

5. Cook pappardelle noodles for 8-10 minutes. Strain.

6. Serve a generous amount of venison Bolognese over the pasta. Top with Parmesan cheese and garnish with fresh parsley leaves. If you have leftover venison Bolognese, freeze it for up to 5 months.
